Garlic Artichoke Parm Chicken

This Garlic Artichoke Parm Chicken is the perfect easy dinner. Toss everything in a baking dish, or on a sheet pan, and let it bake to perfection. This is a family friendly and easy dinner that everyone will love.

I love to eat but I hate to do dishes, so I am always looking for fuss free recipes. The less clean up a meal requires, the better! This meal has quickly become a favorite of my family. I switch up the veggies to reflect what I have on hand. Sometimes it is carrots and potatoes, sometimes asparagus and mushrooms. But, it always has chicken slathered in this delicious garlic artichoke parm gourmet dip from Kroger in the deli.

My photos did not do justice to this dish. The veggies and chicken end up swimming in butter; it is so good it made me want to cry a little the first time I made it. I was so proud of myself for this recipe. It seriously rivaled any nice meal out I have had in the last few years and it was so easy!

Ingredients:

1 cup of baby carrots

10 baby red potatoes cut in half

2 to 4 chicken breasts

2 tablespoons of spinach artichoke parm dip per chicken breast

Mushrooms, sliced

3 tablespoons of butter, divided

Instructions

  1. In a large baking dish, or sheet pan arrange carrots, halved red potatoes, mushrooms and chicken breasts.
  2. Spread 2 tablespoons of garlic artichoke parm dip over each chicken breast.
  3. Add a tablespoon of butter over each vegetable.
  4. Sprinkle with salt and pepper if desired.
  5. Bake at 350 for 30 minutes or until the chicken is thoroughly cooked.
